Vegan Prawn Fajitas

This recipe is so delicious and easy.

Ingredients:


Filling

  • 1 packet of vegan prawns. I got a pack from Coles, the brand is Sophie's.

  • 1/4 cup of olive oil

  • 2 teaspoons of cajun spice

  • 1 and a 1/2 red onions

  • 1 red capsicum

  • 2 garlic cloves

Guacamole

  • 3 avocados

  • 1/2 a red onion

  • 1 garlic clove

  • 2 fresh limes

  • 2 fresh jalapeño chillies

Toppings

  • Totellas

  • Vegan sour cream / mayo

  • Corn (canned)

  • Tomatoes (I halved a handful of cherry tomatoes)

  • Cabbage (sliced)

  • Coriander (for garnish)


Method:

  1. Finely dice 1/2 an onion, 1 glove of garlic and the jalapeños. Remove the seeds if you want a milder flavour.

  2. Juice the limes and add to onions and jalapeños. Add a teaspoon of salt.

  3. Leave to marinate for at least 20 minutes.

  4. Start the filling. In a medium fry-pan, heat 2 teaspoons of olive oil and sliced onions and capsicum.

  5. Add prawns and cajun flavour.

  6. Toast Tortillas

  7. Build fajitas

  8. Serve!
