This recipe is so delicious and easy.
Ingredients:
Filling
1 packet of vegan prawns. I got a pack from Coles, the brand is Sophie's.
1/4 cup of olive oil
2 teaspoons of cajun spice
1 and a 1/2 red onions
1 red capsicum
2 garlic cloves
Guacamole
3 avocados
1/2 a red onion
1 garlic clove
2 fresh limes
2 fresh jalapeño chillies

Vegan sour cream / mayo
Corn (canned)
Tomatoes (I halved a handful of cherry tomatoes)
Cabbage (sliced)
Coriander (for garnish)
Method:
Finely dice 1/2 an onion, 1 glove of garlic and the jalapeños. Remove the seeds if you want a milder flavour.
Juice the limes and add to onions and jalapeños. Add a teaspoon of salt.
Leave to marinate for at least 20 minutes.
Start the filling. In a medium fry-pan, heat 2 teaspoons of olive oil and sliced onions and capsicum.
Add prawns and cajun flavour.
Toast Tortillas
Build fajitas
Serve!
